how to: mini eggs cupcakes

Hoppy Easter, hunny bunnies! Let’s make some Mini Egg cupcakes!

I’m going to use a boxed cake mix because I am who I am, and I can’t tell the difference.

Cake Ingredients:

  • Rainbow bit cake mix by Betty Crocker
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup milk or water
  • 2-3 drops of neon pink food colouring

Mix the cake mix and other ingredients. Put cupcake cups in your pan and load a scoop of batter into each one. Hot tip: use an ice cream scoop for easy scooping and even distribution.

Buttercream Ingredients: 

  • 1 cup butter, softened
  • 4½ to 5 cups powdered sugar
  • 1 teaspoons vanilla
  • 5 tablespoons heavy cream or milk
  • ¼ teaspoon salt
  • 2-3 drops of neon pink food colouring

Toppings:

  • Mini Eggs (crushed with the flat side of a knife)
