Top of tha marnin’ to ya! It’s St. Patrick’s Day, which gives me a great excuse to buy Lucky Charms and make some unreasonably sugary cupcakes.

I’m going to use a boxed cake mix because I don’t have a ton of time to make these bad boys, and I honestly can’t tell the difference in flavour.

Cake Ingredients:

  • Rainbow bit cake mix by Betty Crocker
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup milk or water
  • 3-4 drops of green food colouring

Mix the cake mix and other ingredients. Put cupcake cups in your pan and load a scoop of batter into each one. Hot tip: use an ice cream scoop for easy scooping and even distribution.

Toppings:

  • Lucky Charms cereal


Buttercream Ingredients: 

  • 1 cup butter, softened
  • 4½ to 5 cups powdered sugar
  • 1 teaspoons vanilla
  • 5 tablespoons heavy cream or milk
  • ¼ teaspoon salt
  • 3-4 drops of green food colouring

Soften your butter and then add the other ingredients, adding more sugar or milk to make it thicker or thinner, depending on the consistency you’re looking for.

Frost your cupcakes with green buttercream frosting and garnish with Lucky Charm marshmallows.
